Producing Quality Meat on Twin Springs Farm

Pastured beef, pastured veal and pastured pork- we raise all three on Twin Springs Farm in Talladega County. Our animals enjoy grazing, foraging and rooting in our pastures, but our program begins with the genetics of our Devon cattle and Berkshire pigs. We believe a foundation rooted in the bloodline of an animal gives them a head start to producing quality grass-fed meat, full of flavor and marbling. We chose Devons because they are one of the oldest breed of cattle in America. The breed was not developed by crossing genetics with other breeds to enhance their qualities but rather crossed from within the breed to produce the most efficient grass eaters. Devons not only adapt to pasture, but thrive on grass only because of they are predisposed to do so.
Berkshire pigs are a docile breed and sometimes known as the “white table cloth” of pork chosen by many of the nation’s top chefs to serve in their restaurants. Our meat bloodlines shine through in the marbling and flavor of the pork. Pigs are not equipped to get all the nutrients from pasture so we make sure ours are fed a well balanced diet formulated for them. They are also given “treats” seasonally of pumpkins, Chestnut Oak acorns and clover clippings.
Our Veal calves are kept with their mama and the entire herd… consuming milk, grass and hay (which we also raise ourselves), running, playing and getting the exercise that gives the meat a beautiful red color which reflects the lifestyle they enjoy from the day they are born until they are harvested at approximately 6-7 months.
We walk daily with our animals and they come to us and follow us around which we think indicates they are happy, content and stress free- this translates into the delicious flavor. Our mamas are carefully watched to make sure they maintain a body weight that not only benefits them, but also the calves and piglets they are nursing and carrying. Delicious, quality meat starts before the baby is ever born because we believe prenatal care is just as important for animals as it is humans.
We try very hard to produce meats that reflect God’s blessings on our farm and family and want everyone who chooses our farm to help feed their family to be blessed with healthy and delicious meat…we take this responsibility to heart. Our processor is USDA Inspected and we work with him constantly to come up with new cuts of meat from our animals to ensure waste is minimized, so be sure to check out our product line.
