Greek Squash Casserole

Ingredients:

  • 3 lbs of Sweet Grown Alabama zucchini, coarse grated
  • 4 large garlic cloves, minced
  • Half of a Sweet Grown Alabama onion, coarse grated
  • 1 Sweet Grown Alabama egg
  • 4 oz ricotta cheese
  • 4 oz feta cheese
  • One teaspoon dried dill
  • Breadcrumbs
  • Paprika, salt and pepper to taste

Directions:

  1. Sauté grated zucchini, garlic and onion in pan with a little salt and pepper to taste on medium heat till most of water is cooked out or for about 20 minutes. 
  2. Let mixture cool.
  3. Mix in one egg beaten, dried dill, ricotta cheese and feta cheese.
  4. Cover with breadcrumbs and sprinkle top with paprika.
  5. Bake at 350 degrees for one hour.
  6. Let cool for 30 minutes and enjoy!
