Squash Casserole

Ingredients:
- 2 tablespoons of butter
- 5 Sweet Grown Alabama yellow squash cut into 1/4 inch slices
- 1/4 cup chopped onion
- 1 large egg
- 1 cup shredded sharp cheddar cheese
- 8 ounces sour cream
- 1 teaspoon of Nature's Seasons seasoning blend
- 1/2 sleeve of Ritz crackers
- 1/4 cup water
- Salt and pepper to taste
Directions:
- Preheat oven to 350 degrees.
- In a large skillet, melt two tablespoons butter over medium heat and add sliced yellow squash, onions and Nature's Seasons seasoning blend.
- Cook until tender (add 1/4 cup of water to squash while cooking).
- In a large bowl, whisk together one large egg, cheese and sour cream.
- Add cooked squash and onions to egg mixture and stir well.
- Spray a 9x9 casserole dish with cooking spray and pour squash casserole mixture into baking dish.
- Crush Ritz crackers and spread evenly over the top of the mixture.
- Bake in oven for 30 to 40 minutes or until top has lightly browned.
